Mayonnaise – Low-fat Alternative Recipes
Since these sauces do not contain eggs, you can store them in the refrigerator for several days. However, freezing is not advisable as it will lose taste and texture.
Mayonnaise is the most widely used sauce in the world. It is used in a wide variety of recipes and preparations these days. Unfortunately, however, it isn’t quite as healthy as it is high in fat.
Some of these alternative recipes are vegan and therefore recommendable for anyone who wants to eat healthily.

Mayonnaise without egg
This mayonnaise has the advantage that it can be heated and is very easy to digest. Since it doesn’t contain an egg, you can add broths and cook them if necessary. You need the following ingredients:
- 1 cup of milk
- olive oil
- salt
First put the milk with a little salt in the blender jar and gradually pour in the olive oil until a thick sauce is formed.
Then put the mayonnaise in the refrigerator, preferably in a jar with a lid. Incidentally, this mayonnaise can be kept for several days and is a good idea for picnics, barbecues, etc.
Since it does not contain an egg, there is no risk of intoxication. You can also replace the whole milk with semi-skimmed milk or soy milk if you prefer a lighter sauce. A little tip: try chives, garlic or mustard for refinement.
Vegan mayonnaise
This mayonnaise is also called “Veganaise” and can be used in many ways, e.g. B. for salads, quiche etc. The preparation is very simple and does not contain any animal ingredients. You need:
- 1 potato
- 1 carrot
- Juice of one lemon
- 3 tbsp oil
- 1 tbsp mustard
Peel, wash, cut and cook the potato first. Then peel, wash and cut the carrot. Then remove the juice from the lemon. Then put all the ingredients (oil and mustard as well) in the blender and puree them.
Then store the vegan sauce in a hermetically sealable container in the refrigerator. As a variant, you can use beetroot instead of potatoes. However, this is used raw and then gives the sauce a special color.
Try this variant for rice dishes. You will see how delicious this simple sauce can be.
Vegan soy mayonnaise
This is a recipe that uses soy milk. Hence the name “Sojanaise”. Ingredients required:
- 1 cup of sunflower oil
- 1/4 cup soy milk
- 1/2 clove of garlic
- Juice of one lemon (or the same amount of vinegar)
- salt
First, put soy milk, salt, oil, and garlic in the blender jar. Set the mixer on a low setting while doing this. Then let the sauce sit for a while so that the oil binds.
Then add the lemon juice and beat everything until the sauce thickens. In this case, you can also use beetroot or cooked carrots, mustard or avocado again. The color of the soy sauce will then change accordingly.
Carrot mayonnaise
This recipe is just delicious. It will give your dishes a different taste. As with the previous recipes, you only need a few ingredients here:
- 750 g carrots
- 1/4 cup oil (olive, corn, or sunflower oil)
- 1 clove of garlic (you can use more or less depending on your taste)
- A bit of salt
- Juice of one lemon
First, peel and cut the carrot into thin slices. Then cook them until they’re done, but not too soft. Then let the carrots cool a little and then puree all the ingredients with the hand blender.
This creates a homogeneous orange paste. If you want a more intense taste, add a little more oil as well. By the way, this sauce can be kept in the refrigerator for a week. However, do not keep them in the freezer as they will lose their taste and texture there.
Light mayonnaise
This is a mayonnaise made with yogurt. It is therefore more digestible and healthier than commercial mayonnaise. You need the following ingredients:
- 1 cup of yogurt
- A few drops of lemon juice
- A bit of salt
- 1 tbsp oil
First put all the ingredients in the blender jar and beat them until you get a creamy and homogeneous mixture. Then keep the mayonnaise in the refrigerator.
As a spicy variant, you can also add chopped parsley or pepper. If you prefer it a little fresher, you can even mix in finely chopped celery. By the way, all variants are low in calories and also suitable for weight loss diets.
Hazelnut and pear mayonnaise
Do something different, a real delicacy: this recipe is much fruity and gentler than other mayonnaises. This sauce gives your dishes a particularly mysterious note.
It goes well with fresh asparagus, steamed vegetables, sandwiches or salads. But it can also be used for snacks, finger food or toast. You need the following ingredients:
- 1 egg
- 1 clove of garlic
- 100 ml of sunflower oil
- 1 large pear
- 20 hazelnuts
- salt
- pepper
- nutmeg
First peel the pear and remove the skin of the hazelnuts as much as possible (or buy hazelnuts that have already been shelled). Then puree all the ingredients in a blender and season with salt, pepper and nutmeg to taste.
