Tres Leches cake is a popular dessert in various Latin American countries . It consists of three different types of milk in a moist cake. Today we’re going to show you a very simple recipe that you can use to surprise your guests!

Ingredients for the Tres Leches cake

  • 3 eggs
  • 2 cups of flour (280 g)
  • 3/4 liter milk (750 ml)
  • 1 cup of powdered milk (140 g)
  • 2/3 cup butter (100 g)
  • 1 1/4 cups of sugar (250 g)
  • 1 cup of condensed milk (250 ml)
  • 1/4 cup heavy cream (125 ml)
  • 6 teaspoons of baking powder (30 g)
  • 1 teaspoon vanilla extract (5 ml)

Ingredients for the Tres Leches meringue

  • 6 eggs
  • 1 lemon (100 g)
  • 3/4 cup water (180 ml)
  • 1 1/2 cups of sugar (300 g)
  • 1/4 tablespoon tartar baking powder (creme of tartare) from the health food store (2.5 g)

Preparation of the cake

  • Beat the sugar and butter until frothy . It is best to take the butter out of the refrigerator half an hour beforehand so that it becomes softer. Or warm it up in the microwave for a few seconds.
  • Preheat the oven to 250 degrees.
  • Then add the eggs to the butter mixture piece by piece. Meanwhile, keep stirring.
  • Then add the flour and baking powder.
  • When everything is well mixed, add the milk and vanilla extract and mix well.
  • Pour everything into a baking pan.
  • Bake for half an hour until golden brown,  possibly also taking a toothpick sample in the middle of the cake. If the toothpick stops sticking and comes out dry, the cake is done.
  • Then take it out of the oven and prick the surface evenly with a fork. This will allow the cream mixture to soak in better. We’ll explain in a moment how this is prepared.
  • Mix the condensed milk, cream and milk powder together well.
  • Finally, pour this cream mixture evenly over the baked cake.

Preparation of the meringue

  • Beat the egg whites until it is very stiff, this is best done with an electric mixer.
  • Next, add the cream of tartar powder to give the egg whites fullness and a frothy consistency. Put aside.
  • Heat water and sugar over a low flame. Stir until the sugar is completely dissolved, then add a little grated lemon zest. Keep stirring until the sugar caramelizes. The mixture is ready when it drips thickly from the spoon.
  • Add the caramel to the egg whites and stir the mixture on the highest setting for about 6 minutes with the hand mixer.
  • Now put the meringue on the cake and distribute it evenly with the spatula.
  • If you like, you can garnish the cake with berries.
